Smoked Spanish Peppers and Zingy Mushrooms in a creamy sauce

My love for using smoked sweet red peppers is taking over my recipes for now , I made these zingy mushrooms for a friend who popped in for brunch about 2 months ago but I have been very lazy and this recipe is finally seeing daylight. I guess the electric atmosphere of the yellow jersey clad stadium full of Brazil fans and the super tight match going on with Camroon is giving me a much needed rush of happy hormones ,add to that the frenzy of the Wimbledon matches , the air in Wimbledon is heavy with anticipation, huge posters , fluorescent tennis ball props in all windows , the traditional colours of the Wimbledon ribbons and balloons galore, the bus service from the station to the venue with hyperexcited people , everything is screaming tennis here!

Lamuyo Peppers are great for roasting as they are bigger and sweeter than their cousins the hot variety. They are juicy and crunchy and go well with garlic,basil,oregano,taste fab with cheese , think stuffed peppers grilled , just perfect for summer !

The recipe was given to me by P aunty , shes a fab cook as I have mentioned in my past posts too and her recipes are innovative, delicious and easy to make, I love pestering her to keep sending me more recipes everytime we talk 😉 .So I decided to amp up this recipe with some madness my style and use up the handsome red pepper staring at me from my fridge 😉

Ingredients:

  • 1 large pack Chestnut Mushrooms sliced
  • 1 large red Lamuyo sweet pepper
  • 8 cloves Garlic- bash and chop fine
  • 1/2 red onionchopped very fine
  • 2 chillies- (more or less acc to your taste) – chop fine
  • 3 heaped tbs flavoured soft cheese, I love using the herby Philadelphia
  • 2 tbsp  Olive Oil
  • Sea Salt to taste
  • Parsley- a handful -chopped finely

Method:

  • Roast the pepper on gas flame till the skin chars and begins to peel off, I use tongs to hold it by the stem so it can char even at the top.
  • While the pepper cools just enough to allow you to peel and reveal the smoked juicy flesh, you can use the time to wash and slice the chestnut mushrooms
  • While taking off the charred skin off the smoked pepper remember to place a dish below as it will release lots of juice which we don’t want to loose as it is one powerhouse of smoky peppery sweet flavour!
  • Heat oil in a sauce pan and saute the garlic till it turns brown and the familiar aroma of fabulous garlic begins to waft and assault your nostrils.
  • Then add the very finely chopped red onion and cook on a low flame stirring regularly till the onion is thoroughly crispy and reduces in quantity, do not let it burn.
  • Then toss in the mushrooms and the chopped smoked pepper and cook for about 2 minutes on a low flame ,stirring and making sure it does not stick to the pan or overcook
  • Then add the soft cheese ,sea salt and finely chopped parsley,mix well and cook with lid for about 1 to 1 1/2 minute.
  • Serve with garlic bread smothered in butter – eat guilt free;)

What I love about this dish , its creamy , its a bit sweet a bit more zingy and has an underlying deep smoked flavour that is robust without being overpowering ,I’d say its a new comfort food for me , what with all the moorish soft cheese in there!1-IMG_6699 (Copy)

Frankie – Popular Indian street food

Tawa Frankie Roll – How I decided to re-create this popular Indian street food at home. In 2014, global flavour leader McCormick, the parent company of leading herbs and spices brand Schwartz, is celebrating its 125th anniversary. The yearlong celebration kicks off with the launch of the 125th Anniversary Edition of the Flavour Forecast (a new, annual prediction of what ‘flavours’ will be most popular in the cooking world) and the Flavour of Together programme, with the goal of connecting people around the world as they share 1.25 million stories about the special role food and flavour plays in our lives through.

To inspire people to share their flavour stories and tell the blogger community about Flavour Forecast, McCormick challenged me and a few other bloggers  to come up with a new recipe that is based on the Flavour Forecast trends :

1. Chillies Obsession: Food lovers everywhere are seeking out their next big chilli thrill.

2. Modern Masala: Indian food is finally having its moment, breaking free of its traditional confines with modern interpretations.

3. Clever Compact Cooking: Proving that big flavours can come from small spaces, cooks in urban kitchens are making the most of what’s available.

4. Mexican World Tour: Mexican flavours are making their way around the globe, with people everywhere discovering new aspects of this bright, casual cuisine.

5. Charmed by Brazil: The world’s attraction to Brazilian cuisine is heating up, thanks to its seductive mix of global and native influences.

I decide to take up Modern Masala as a flavour trend. Coming from India, using a complex mix of spices as part of our daily diet has always been a part of my life. The beautiful large open fruit n vegetable markets even in major cities are a visual treat and there is a lot of passion involved in say getting the right type of chilli powder. So I think my recipe is an amalgamation of these two big flavour trends together – Chillies Obsession and Modern Masala and of course because I manage all my culinary experiments in my tiny urban kitchen which is the size of a postage stamp I am sure my recipe also covers the theme Clever Compact Cooking!

My most vivid memory of spices being sold loose is of this huge wholesale and retail market in an area called Parel, Mumbai in India. There are many tiny shops and vendors which hand carts with huge piles of spices, bright red chillies in jute sacks, and mini yellow mountains of turmeric and ever imaginable spice being sold in the open. Of course, with our modern industries being so well developed we always used masalas out of a packet but the sheer variety available locally in any small town in India is mind-boggling.

In London, whenever I trudge to my local Indian shop and purchase Indian spices, I secretly wish that I could get an unlimited supply of aai’s homemade masalas. Her garam masala and red chilli powder where she carefully selects 2 types of chillies with varying degrees of heat and roasts them in a kadhai after they have been dried in the blistering hot afternoon sun! Then she takes it to a local mill where it is ground and packed into a large ceramic jar and then stored at home.

I have made a simplified version of Tibbs Frankie using boneless mutton and a variety of Schwartz spices which were sent to me. You could safely say that this fella ”Frankie” is a distant cousin of the Fajita and the Kathi Roll.

How this Frankie came into being is also a very interesting story which I shall share in a few lines here. These lines are from the Tibbs Frankie website

”The year 1967 Mr. Amarjit Tibb on returning back from England had a stopover in Beirut. During his brief stop there he stumbled upon a very ingenious Lebanese preparation, which was a pita bread wrap, with a variety of stuffing’s, this fascinated him. Upon his return the idea still lingered on and he kept innovating it to suit the Indian palate, after a year of research along with his wife they hit upon the perfect concoction. This Indianised wrap was soon tried among friends and family and after testing brilliantly it hit the markets. That was a new era to the term fast food in Mumbai, it caught on like fire in the Jungle, people accepted it and kept asking for more.Now came the problem of naming the product, again a number of brainstorming became the order of the day till a unanimous decision on the name was taken i.e. Frankie”

This explosion of flavours in a handy easy to eat roll which was given a  modern food truck makeover is a gastronomic delight and is available in a large variety of stuffings both veg and non-veg.I have rather fond memories of my college days and spending my pocket money which was always in short supply on these spicy, tasty rolls with a bunch of friends giggling away and then gathering any loose change we had left amongst us to buy a bottle or two of some fizzy cola to quench our thirst. Alert : have been suddenly been hit by a huge wave of nostalgia 🙂

I have created what is my version of a tawa chicken roll (tawa meaning pan in Hindi), the original Tibbs frankie filling is a tangy spicy  taste which they attribute to a secret ”Frankie Masala” – humm , well I think I got pretty close 😉 – evil laugh follows 🙂  You can go crazy and creative with the fillings and use this recipe idea to use up meat from your sunday roast, try various different veg and non veg patties with meat and masalas rolled into boiled potato casing and shallow fried. Great way to use a lot of colorful veggies and create a stir fry filling too – the possibilities are endless.

Popular Indian street food, this was created in Mumbai and is a deliciously paratha stuffed with a variety of fillings and green chutney

Equipment

  • Tawa – Flat frying pan
  • Saptula

Ingredients
  

Tawa Chicken Filling

  • 50 Grams Chicken breast
  • 1 pinch Asafoetida
  • 2 tsp Garam Masala
  • Onion salt as per taste
  • 1/2 tsp Garlic Minced
  • 2 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • Red Chilli powder as per taste
  • 1/2 thum-sized Fresh Ginger fresh peeled
  • 2 medium Red onions finely chopped
  • 1 tsp Turmeric
  • 2 lage Jjuicy tomatoes chopped very fine
  • 1 large Green chilli split lengthwise
  • 1 Red pepper slit lengthwise
  • 3 tbsp Cooking oil

Mint and Coriander Chutney

  • 1 large bunch Fresh Coriander
  • 1 small bunch Fresh Mint leaves
  • 2 Green chillies
  • 1/2 Lime – freshly squeezed
  • Salt to taste

For the Frankie filling

  • 1 large Red onion chopped lengthwise

For the Paratha coating

  • 2 small Eggs
  • Salt for seasoning

Instructions
 

To make the Chicken Filling

  • Heat a saucepan on medium heat and add the oil
  • Once the oil is hot, add the asafoetida
  • Then add split green chilli and crushed fresh ginger
  • Saute' and add the garlic granules
  • Saute' and add the garlic granules, when the garlic begins to give out a strong fried aroma its time to add the finely chopped red onion
  • Cook the onion till it reduces and turns a delicious brown, then add the coriander and cumin powder and garam masala and mix well
  • Then add the finely chopped tomato and add very little water and cook for 1 -2 minutes without lid
  • Stir frequently, so as to ensure the mixture does not stick to the saucepan
  • Now the spices have been thoroughly cooked along with the onion and tomato to make a thick gravy
  • Cut the chicken breasts and red peppers into lenghthwise strip and add to the gravy
  • Add onion salt to the mixture, red chilli powder and turmeric
  • Cover and cook until done

To make the Mint and Coriander Chutney

  • Wash the coriander and mint leaves, blend to a smoothpaste with a green chilli
  • To reduce the heat use 1 chilli de-seeded.Add the salt and lime juice and sblend once again
  • A smooth thick green paste is the consistency we are after – add some water to adjust the consistency
  • This chutney stores for upto 10 days in the freezer in a clean ,air tight jar – rarely lasts that much in my house though -I love making Bombay sandwich for dinner with this delightful chutney

To make the coating for the Paratha

  • Crack the eggs in a bowl and beat with a fork, add salt to taste
  • Using a plastic brush spread on the surface of a frozen ready to eat paratha
  • Place the eggy side down on a hot pan coated with some cooking oil
  • Ready to eat frozen parathas are readily available in most supermarkets and Indian grocery stores

How to put the Frankie Roll together

  • Once the paratha coated with egg has been cooked on both sides, slather it with the mint and coriander chutney and add some red onion chopped lengthwise
  • Add a generous helping of the chicken filling , roll and wrap one end with some kitchen foil or baking paper. Enjoy hot
  • Dip into the chutney or tomato ketchup as you munch along

After I received the samples and wrote up my flavour story, my left hand was operated on (unexpected rescheduling) – a minor but rather errrmmm painful surgery and I walk around most of the time with a sling (promptly remove it as soon as OH leaves home for work hehe) So I had a bit of a panic attack about getting this post up on time,I know I missed the deadline by a few days  🙁

Chicken and Red Lentil Stew – a complete ONE POT meal (Suran & Red Lentil Stew)

There are times when I really want a hearty meal but don’t have the energy to stand and cook an elaborate meal. It is at times like that I turn to One pot meals, served with a warm baguette it is a filling, healthy and easy and quick to meal option which NO compromise on taste whatsoever! Moreover, its homemade, has flavour and is a satisfying experience to make .

I had been meaning to try and cook a stew using red lentils (masoor – Marathi for red lentil )for some time , they are my most favourite lentils and I am ALWAYS stocked up on a large 2 kilo pack of dried red lentils split and without skin , from my local Indian grocery shop at Tooting called Dadu’s. Also since all the other fresh ingredients were procured from my local LIDL this dish is GREAT value for money too! Am totally in love with the FRESH fruits and vegetable selection at LIDL right now.I bought some bright red long crunchy sweet peppers, a pack of medium hot chillies, fresh chicken breast fillets, a very cute packet of garlic, mixed pack of cauliflower and broccoli florets and a packet of gorgeous looking Shallots.( I have always wondered why the lentils are called RED when clearly they are a  lovely light orange colour !)

I love inventing a recipe as I go along and when I got my vegetable tray out on Sunday morning I had all these lovely vegetables staring at me and I just threw in what I thought would taste good together and VOILA ! A Steaming hot , thick, wholesome and tasty chicken and red lentil broth was born.

I love having some baby potatoes in stock and they are always handy in a stew , besides being quite the self-proclaimed ”queen of curries” I always am well stocked on Indian spices so bay leaves and cinnamon sticks aplenty in my kitchen larder – oh yes

Please don’t feel put off by the ingredient list , trust me they marry well together in the taste department and the end result is well worth your time and effort!

The biggest bonus of this stew recipe is that you can create your OWN vegetarian version by replacing the chicken with Quorn or if you don’t for some reason like or have never tried or have no access to Quorn then try replacing the chicken fillets with  Suran/Elephant Foot Yam, it can be chopped into big chunks and it takes up flavours very easily. But with the yam the cooking time drastically will reduce as it can go from just right and chewy to soft, goeey or totally disappear into the stew ! My aai (mum) always used suran as a meat replacement and marinated it well in the spices we would use for chicken or lamb and made a thick gravy dish with it, when I was younger she has managed to fool me many times over thinking it was mutton 🙂 – Aai I miss you and all the food you cook – sigh…. no India trip in sight anytime soon 🙁

(Dangerous though it looks the elephant foot yam is very very tasty! )

Serves:4  Preparation Time: 10 minutes  Cooking time:35 minutes

Ingredients:

  • Red Lentils / Massor Dal -3/4th cup
  • Chicken breast mini fillets – 750gm / Comparable Quorn fillets
  • 5-6 baby potatoes
  • 6 shallots approx 200gm
  • 2 large sweet and crunchy pointed Red Peppers – approx 200gm
  • 2 short medium hot chillies
  • 2-3 bay leaves dry
  • red chilli flakes as per taste
  • sea salt as per taste
  • 1 veg stock pot
  • 3 dried red Kashmiri chillies
  • 1 large roll of cinnamon
  • 4 tbsp sunflower oil
  • a handful of Broccoli and Cauliflower florets
  • 2 large tbsp of tomato puree or half of a large tomato finely chopped
  • Red chilli powder
  • Sugar 2 tsp

Method:

  • Wash and soak the red lentil in water to soften them so they cook more quickly then get on with all the other chopping and cutting prep’s.
  • Chop the shallots lengthwise.
  • In a large stew pot or huge saucepan heat the oil and add the bay leaves,cinnamon stick and dry red kashmiri chillies which I have a very big packet of and am trying to finish , they only add colour and no heat so if you don’t have these you can totally leave them out – no harm done here.
  • Now add red chilli powder and sugar and just when the sugar starts to caramelise add the shallots and shallow fry them till they reduce and begin to turn a lovely brown colour.
  • Now add the 2 large tbsp’s  of tomato puree or half of a large tomato finely chopped and stir till it mixes well with the shallots.
  • Add the roughly chopped long red peppers and baby potatoes and saute’ for 2 minutes.
  • Add the washed chicken fillets/suran (elephant yam), soaked red lentils with the water it was soaked in.
  • Add the washed and roughly chopped Broccoli and Cauliflower florets and now add enough water.
  • I did not measure the water I added but add enough to get a nice thick stew , while the ingredients are cooking together on a low flame ,feel free to top up with more water as the lentils easily soak up as much water as you feed it with. Having said that you don’t want to end up with a watery stew so don’t add more than 3/4th cup at one go.
  • Season with sea salt , I love MALDON SEA SALT which I use and I have a few packets ALWAYS stashed away, great n salads it is!
  • Then sprinkle red chilli flakes and gently place a veg stock cube on top on this lovely pot of goodness bubbling away. I prefer the KNORR veg stock cubes , they have a great bouquet of flavour and are very handy at times when am exhausted and need to quickly cook up something tasty!
  • Stir well, cover with a lid and cook on a medium flame.
  • The red lentil will froth as they cook not to worry simply stir now and then and mix well, don’t allow the stew to get too thick we want enough lovely gravy to slurp this stew and dip the baguette into!

I was so hungry that I didn’t click any photos of my lovely fresh ingredients but it was a brilliantly sunny day yesterday and after this wholesome stew for lunch we had to really force ourselves to go and get some much needed fresh air at Morden Hall Park – I happily left my smartphone behind so photos to share but suffice to say that it was a gorgeous walk through the huge grounds and we saw many happy families ,happy couples and cute old folks and even happier kids and dogs romping around in the muddy park  fun! And because we were so good we treated ourselves to hot tea and a sandwich at a local Turkish Cafe 😉 hehehe

Am very happy and proud of this new original recipe creation from my experimental kitchen. Next time I make this stew I will smoke the sweet and crunchy long red peppers and peel off the skin , to add a deep smoky flavour to the stew and not have the skin floating around – double whammy I say 🙂

Caramelised Red Onion Chutney with Feta and Chickpeas Salad

On a trip to one of my favourite supermarkets I purchased my first jar of caramelised red onion chutney. Coming from India my palate is well -acclimatised to red onions and their sharp sweet taste. The tangy taste and deep rich colour and versatility of this chutney got me hooked on this dish and I was using it ever so often.

Since then I had been planning to make this chutney at home and after scouring for recipes online, I found this interesting recipe by Fraser Doherty – The Super Jam Cookbook. It’s a basic and simple recipe yet perfect in proportion and that’s exactly what a great recipe should be.

It’s a perfect accompaniment for a good roast or in toasted sandwiches with a light soup during a cold wintry day. This chutney goes well with feta cheese and chickpea salad as it does with cheese and crackers. This is also my way of using all those empty glass jars that have been stacked behind various shelves in my tiny kitchen.

Averse to consuming chickpeas in popular Indian fare like ‘’Chole Bhature’’( a chickpea masala gravy with ‘’Bhature’’ which is huge, puffed fried fermented wheat bread). I find this a much healthier alternative to get my husband to eat chickpeas and get a nod of approval from my biggest critic 😉

After adding vinegars

Caramelised Red Onion Chutney

Ingredients:

  • 8 red onions
  • 1 red chilli
  • 2 bay leaves
  • 25ml olive oil
  • 200g brown sugar
  • 150ml balsamic vinegar
  • 150ml red wine vinegar

Method:

Chop the red onions into fine long slices. Slice the chilli into long thin slits. Heat the olive oil in the saucepan and add the bay leaf and chilli followed by the red onions. On a low flame stir continuously and cook for about 20 minutes.

The onions will change colour now and turn dark and the mixture will have reduced in volume. Now stir in the sugar first followed by the vinegar, I used dark muscovado sugar as I love the rich dark smoky flavour. Simmer this mixture for 30 minutes and the chutney now turns sticky and thick.

While this is simmering, sterilise all those glass bottles and store the chutney in them. It takes a month for the flavour to mature fully.

Feta Cheese and Chickpea Salad

Serves 4 as a side with a main meal

Ingredients:

  • 120g chickpeas (That’s half a can of tinned chickpeas ready to eat)
  • 120g packet of crunchy salad leaves
  • 100g feta cheese
  • A pinch of Maldon sea salt
  • Half a red onion sliced thin and lengthwise
  • Few cherry tomatoes
  • Few small boiled potatoes
  • Some slices of colourful peppers

Method:

Create a bed of leaves and throw in the chickpeas and other ingredients. A generous dollop of the caramelised red onion chutney in this salad will offset the feta cheese beautifully. It’s great for a meatless Monday lunch or a perfect accompaniment for a big family Sunday lunch.

The best part of making this chutney is that I get to give some to my friends, sharing is fun isn’t it?

Hot and Spicy Lamb chops in Apple sauce

We all crave comfort food and at times the need is so great nothing else will do. Since I have been making variations of  rice dishes in the past few days I didn’t want to do anymore rice but wanted a light yet rich in taste and spicy one pot meal for dinner.

I also wanted to cook a savoury dish with red meat and use apples as an ingredient to enter the recipe competition for the best apple recipe hosted by Gourmandize Uk and Ireland and making a sweet preparation was not what I wanted at all.

Still taking a leaf from the sweet preparations from apple , I think cinnamon and apple go very well with each other. It’s these well paired fellas that can spice up even the most drab foods.

So I decided to get some lean lamb shanks and marinate them overnight in a hot Indian marinade.

I have tried to tone down the amount of spice here so as to cater to taste buds that don’t take kindly to overpowering spices and yes ”heat” in food shouldn’t mask the other subtle flavours should it? But if your palate is used to heat feel free to AMP you the volume 🙂 I have mentioned by how much the heat can go in the ingredient list to stay with acceptable levels of taste.

Serves:2

For the marinade:

  • 1 green chilli hot (2 green chillies if you handle spice well)
  • 1/2 a bunch of coriander
  • salt to taste
  • red chilli  powder 1 heaped tsp (2 -3 heaped tsp if you can handle the heat!)
  • freshly ground black pepper to dust onto the lamp chops

Wash and clean the lamb chops and marinate for atleast 2 hours, preferably overnight with salt,red chilli powder,black pepper freshly ground and a puree of half a bunch of coriander and one green chilli. Smear the chops well and cover the dish with plastic and leave in the fridge overnight for the flavours to really sink into the meat.

For the sauce

  • 2 cinnamon rolls, the light brown tightly curled ones, not the thick bark variety – more on the difference between the two in a different blog post!
  • 2 Bay leaves
  • 1 apple sweet
  • half a juicy tomato
  • half a bunch of coriander
  • 1/2 red onion sliced lengthwise
  • 2 bunches of spring onions finely chopped

Method:

  • In a saucepan add 2 large tbsp of sunflower oil or vegetable oil, saute’ the finely chopped spring onions,red onion chopped lengthwise with the bay leaves, cinnamon sticks and cloves till the red onion turns pink and reduces.
  • Now add the half an apple chopped into bite sized chunks.
  • Saute’ on a low flame for about 1 min and then add a puree of half a bunch or coriander,half a tomato and half an apple.
  • Ensure you do not waste any of the purée and scoop out every last precious drop from the mixer by adding water and pour all of this into the saucepan,stir continuously and as it begins to bubble add the marinated lamb chops.
  • The tomato in the puree and the apple in the puree and the bits in the saucepan should all work to now offset the otherwise hot spices – red chilli powder,black pepper and cloves.

  • Cook on a low flame for 25-30 minutes or until the lamb chops are cooked well,add just enough water to ensure the sauce is not going dry as we want a thick rich gravy and open the lid in between and give the whole thing a stir to ensure it does not go dry or stick to the saucepan.
  • You now have the most tender and well cooked lamb chops with a thick, well flavoured tasty green sauce.I loved biting into the bits of apple now then which had gone soft and yum during the process of cooking , what an absolute delight!

Serve with warm bread, better still smear some butter and top it off with some finely diced bits of garlic ,pop it in a pre-heated for about 5 minutes and it’s just so good to polish off that thick sauce after you have savoured the lamb ummm !

What I love about this dish is that the recipe is 100% original, it was deeply satisfying experimenting with flavours and reaching a successful outcome and because I cooked it for my birthday lunch for hubs n me it was rather special too. The powerful spice was beautifully balanced by the sweet apple and as they cooked with the meat they lent a unique richness of flavour. It is wonderful to see how we can marry polar opposites in flavours and create something unexpectedly delightful – an absolute pleasure for the taste buds.

Now all I need is a whole lot of luck to win the very coveted prize of a Kenwood Stand Mixer!

Upma/Uppit (उप्पीट)- a classic Indian breakfast recipe

In Marathi, my mother tongue we call this dish ”Uppit” and in the south of India its called Upma.

It’s a fluffy cooked breakfast made of roasted semolina and spices and can be customized by adding green peas and small carrot bits. I love eating this steaming hot garnished with a generous sprinkling of freshly chopped coriander and some finely grated fresh coconut – umm perfection, can almost feel a strong waft of the aroma swirl around my nose as I sit here and type the recipe 😉

After Kande Pohe this has to be my number one favourite Indian breakfast option. Agreed there’s a lot of ingredients but there’s a lot of flavour too!

In the Matunga area, there are many good Udipi restaurants who do upma on their breakfast menu and it’s so good gobbling fresh hot upma and dowing a cuppa or tow of hot filter coffee before getting to work on a busy weekday morning in Mumbai city. It’s very filling and budget-friendly too:) All you need is some time before rushing for the daily commute to ensure you can squeeze yourself into the restaurant and sit on one of the long wooden benches with complete strangers and hope to God you don’t have coriander stuck in between your front teeth if they smile at you  😉

Upma/Uppit (उप्पीट)- a classic Indian breakfast recipe

Ingredients
  

  • 1 cup rava approx 100 grams
  • 1/2 tsp urid dal
  • 2 tbsp sunflower oil
  • A pinch of asafoetida
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 heaped tsp turmeric powder
  • 1 tsp red chilli powder actually 1/2 a tsp for the ones who do not like their Indian food too spicy
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 2 green chillies chopped fine
  • 5-6 fresh curry leaves
  • 2 pods of garlic chopped fine or simply smash them and drop in the saucepan with skin on!
  • 1/2 red onion finely chopped
  • 1/4 th of a juicy red tomato
  • Salt as per taste
  • Juice of a quarter lime
  • A pinch of sugar
  • Fresh coriander to garnish
  • Fine grated fresh coconut

Instructions
 

  • I usually roast the whole packet of 1 kilo of semolina I buy on a flat pan on a very low flame stirring constantly and then allow it to cool down completely.
  • Then store the roasted semolina in tins ready to use when I need to make this dish or the sweet version called Gooda Sheera/ Sooji Halwa which is a popular Maharashtrian sweet dish and especially important during festivals as we serve it as Prasad to Lord Ganesh or during Satyanarayan Pooja
  • In a saucepan add the oil and as it starts to heat, add the asafoetida, mustard cumin seeds and urid dal. The urid dal brown very quickly so stir this around a bit
  • When the mustard seeds begin to pop add the curry leaves, green chillies and garlic and chopped red onion.
  • When the garlic begins to turn a toasty brown and the onion reduces add the tomato and give this mixture a proper stir
  • Now add the turmeric, red chilli powder, cumin powder, coriander powder and salt and mix well
  • Then add double the amount of water as compared to the quantity of rava/semolina, cover the saucepan with a lid and let the water come to a boil
  • If you wish to add green peas and carrots finely chopped for an extra burst of taste do it just when the water begins to boil and let it cook in the hot water
  • Now slowly stir in the semolina ensuring that it does not form lumps
  • Add the juice of a quarter of a lime, sprinkle a pinch of sugar
  • Cover the saucepan with a lid and cook on a low flame for 2-3 minutes stirring occasionally to prevent lumps forming or the mixture becoming too dry, if it is very lumpy sprinkle water and mix well

  • Serve hot garnished with chopped coriander and freshly grated coconut.

Tasty and Quick Pasta for two from ”nothing”

We all have those days when we realise that all those reserves we had stowed away in various places – the fridge, the cupboard are well..not there and you are hungry and it’s too late to step out.

Panic not! There are ALWAYS a few things here and there which can be thrown in to make something superb! I made some very tasty and quick pasta yesterday and it was such a satisfying experience I cannot tell you how pleased I was with the outcome.

Please feel free to throw in stuff that you have, that needs using up.Waste not want not I say!

Ok so here goes.

Ingredients:

  • Pasta – whichever type you have left enough for 2 people – used tagliatelle and generally 2 rolls are good for one very hungry adult 🙂
  • Sea salt (basically just regular salt)
  • olive oil or regular vegetable oil 1 tbsp
  • Tomato puree/ 1 large tomato sliced and diced fine (I scraped off some leftover tomato puree in a can that was at the very back of my fridge  – just in time !
  • Chilli flakes as per taste)
  • Chorizo – again I have a small portion lying around and it packs a punch in the taste department!
  • Spring onion finely chopped, I had a small bit left over from a bunch and it tasted awesome with the chorizo
  • Dried herb mixture – 2 tsp (or use fresh herbs off your kitchen plants – my dried herb mixture is a bit of left over artisan mix from one of the many food fairs I go to 🙂 it has garlic,parsley,chilli,sun dried tomatoes,salt and basil)
  • 2 – 3 cloves garlic sliced very fine and deep fried to give a superbly crunchy deep taste
  • Some cheddar cheese, I had 2 different packs tied with a rubberband and lying quietly in a small corner of my fridge door – ha! perfect find for pasta I say!

Method:

  • Boil the pasta in a saucepan with a sprinkling of sea salt and drizzle some olive oil as it nears the point when it’s cooked completely, this will ensure it does not get sticky and stodgy.
  • As soon as the pasta is on the boil, in another saucepan,heat 1tsp olive oil or sunflower oil and fry the garlic until it is crisp, to get them to crisp slice them superfine,as much as you can manage to without slicing off your fingers;)
  • Then throw in the chorizo slices and as they cook they release a lot of oil and it really can add a lot of flavour and you don’t buy propecia want to waste that so quickly chuck in the chopped spring onion and the tomato puree,stir and cook this mixture for about 2 minutes on a very low flame.

After the Chorizo is cooked it should look like this

  • Drain off the excess water from the pasta ensuring there is just a little bit to allow the pasta to remain smooth.
  • Turn off the heat at this point and mix well.Then add some chilli flakes and the cheese – as much as you have or as much as your waistline and conscience allows 😉
  • The heat trapped inside the pasta and the sauce will melt the cheese and it just disappears into the pasta giving it that perfectly cheesy not over-the-top taste,which is ex-actly what you want folks!The yummy deliciousness that this pasta is makes me want to dive right into the plate and its smoky garlicy flavour with just the right amount of chilli and chorizo which is my absolute personal favourite for pasta dishes,what more could one ask for!?! 🙂
  • I wish I had some smoked ham,fresh basil and some more chorizo – but hey this was so good I am going to make it again and again!

Valache Birdhe or field beans curry, is an extremely popular bean gravy and has helped soothe many aching hearts and settle ruffled feathers after long gruelling work days.I managed to procure a few packets of these beautiful field beans with brown skin after a lot of searching!Hubs goes completely mental at the mere mention of this dish and insisted on me uploading the recipe and help all the other hungry hubbies out there..ahem ..so without further ado ladies and gents I present to you yummyscrummy recipe.

ThisValache Birdhe or field beans curry recipe is a typical C.K.P way of making a rather traditional legume curry. Vaal or kadve vaal (kadve meaning bitter in Marathi) are generically referred to as Field Beans in English.

Equipment

  • Pan to cook the curry
  • Blender to make a paste from the garted coconut
  • Kitchen cloth to tie up beans for sporuting

Ingredients
  

  • 1.5 Cup Vaal/ Field Beans – soaked, sprouted and skin removed – takes a few days
  • 3 -4 Cloves Lasun/Garlic with skin
  • 1 pinch Hing/Asafoetida
  • 1 Kanda/Red onion – one small finely chopped for the pan
  • 2 -3 tsp Dried Kokum 2 pieces or Tamarind (Chinch/ Imli) -tamarind paste OR dried tamarind soaked in water -remove the pips and use the gooey thick bits
  • 1/2 tsp Jaggery
  • 1 tiny pinch Mohri/Mustard Seeds
  • 1 Pinch Cumin/Jeera
  • 1.5 tbsp Oil
  • 1 tsp Laal Mirchi / Red Chilli Powder
  • 1/2 tsp Halad / Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Jeere/Cumin powder
  • 1/2 fistful Fresh Coriander finely chopped to garnish
  • 3 – 4 tbsp Grated coconut paste * see notes
  • Salt as per taste

Instructions
 

  • Soak the Vaal overnight, change the water in the morning and by evening if they appear puffed then wrap them in a damp cloth and set aside in a vessel with a lid to create an environment warm enough to allow them to sprout
  • Remove sprouted vaal into a bowl and pour like warm water on them, stir with your palms to loosen the skin and many will float to the top, decant the water and remove all the rest of the skins and discard
  • Heat the oil in a saucepan and dust some asafoetida and throw in the mustard and cumin.
  • When the cumin seeds begin to pop, throw in the garlic with their skin on and smashed to flatten them and as they turn colour and release their aroma, add the chopped onion.
  • When the onion turns a delicate pink add turmeric powder, red chilli powder and then add the vaal/field beans.
  • Now add the turmeric, red chilli, coriander and cumin powders and quickly stir in enough water to cover the beans
  • On a low flame cook with lid
  • When the vaal is almost done, add the jiggery, coconut paste and the tamarind paste or the water from the dried tamarind which has been soaked or dried kokum soaked in water and when the vaal are done add salt and garnish with finely chopped coriander.
  • Valache Birdhe or field beans curry is best enjoyed with steaming hot rice

Food pairing

This Valache Birdhe or field beans curry is a delicacy pairs best with a portion of pressure-cooked rice of the Ambemohar variety, Basmati will do too. Always remember, a generous dollop of home-made sajuk tup or pure ghee is a must.

Notes:

  • Grated coconut paste: made by running fresh grated coconut or frozen grated coconut through a mixer/blender. Add 1 green chilli and 1 clove of garlic. My Aai (mum in Marathi) also prefers to also add 1/2 a finely chopped red onion which has been tossed on a pan with the coconut and green chilli – must admit it lends a toasty warmth to the gravy but I skip this step simply because the I compensate for it by using the onion in the pan!
  • Making Chinche cha kool ( usually, a block of tamarind is available packaged in any well-stocked Indian grocery store here in London, if not major spice brands now do tamarind paste in a bottle, find these online or any leading supermarket) – remove some in a bowl – add lukewarm water and gently ease the flesh of the tamarind loose from the seed. Use this thick mix to add to the curry. If you have fussy eater then maybe you want to strain this before adding into the curry. I would avoid straining as the gara – the thick flesh of the tamarind – is flavour packed so embrace it – fibres and all. 🙂

I do know this process for cooking Valache Birdhe or field beans curry, sounds rather labor-intensive and complex but believe you me, its easy-peasy, and the main bit of hard work is only getting rid of the field bean skins.

Easy and healthy one-pot chicken noodles

It was one of those days when I wished the dinner made itself ,but hey you know what I am saying right?Like it’s ONLY Monday and am wishing it was the weekend again , ya, ya that kind of a horrible feeling- gaaahhh! Happens to the best of us , yes even me , ok ok I will get on with the recipe.I  had this vegetable stock packet in my kitchen cupboard that had to be used or else! And I had some tomatoes, bright red  chillies, half a red onion sliced , some unused tiny onions, a juicy lime and a spanking new bottle of Kafir Lime leaves .

Since I had spent the better part of the day, well on facebook 😉 I got my lazy,fat a** out of my house and walked to the supermarket.Some chocken thighs ,a mixed bag with chopped carrot and brocolli on reduced price , just what I was looking for!

Ok so here’s a list of all the ingredients I threw in and managed to make something that made hubby go from ”hummm ummm” to ”interesting” to ” u came up with this recipe like now?” the best compliment, ok am showing off and that sickening right?

Serves:2 , Cook time including serving time :25 miutes

Ingredients:

  1. 500ml vegetable stock
  2. 100ml water
  3. 1/2 of a medium sized red onion sliced lengthwise
  4. 2 -3 shallots chopped lengthwise
  5. 2 cloves of garlic with the skin on
  6. 1 tiny pinch of cumin seeds
  7. 2 Kaffir lime leaves – no more ,they are POTENT!
  8. 2 bright red chillies slit lenghthwise
  9. 1 small tomato chopped into tiny pieces
  10. 3 pieces of chicken with the skin taken off
  11. Red chilli powder as per taste
  12. Salt as per taste
  13. 1 portion of thin egg noodles  – 100 gm approx
  14. 1 small palmfull of diced carrot  – 100 gm approx
  15. 2 -3 bits of broccoli cut into smaller bite sized portions – 100 gm approx
  16. 1/4th of piece of lime to squeeze onto the chicken
  17. 2 tbsp sunflower oil
  18. A smile on your face because you are going to make a new yum dish super quick and you n yours are gonna love-uh it!

The Ingredients

Preparation:

  • Wash the chicken pieces and remove the skin
  • Pan on hob and add one tbsp oil ,saute the thinly length-wise sliced red onion saving a few bits to go into the stock pot.
  • place the chicken pieces and lower the flame, turn the pieces in a few minutes after they start to fry, do not cook them fully as this pan fry bit is to ensure flavour on double impact and get the chicken to release it’s juices
  • at this stage add the tomato bits into the pan and flatten with a spatula after they have sizzled for a bit, this will make the sauted onion flavour marry with the tomato and lock in the chicken juices,squeeze the lime onto this
  • add about 2 tbsp of the vegetable stock to the chicken in the pan and simmer on  as low a flame as possible,keep checking to ensure it does not dry up!
  • Now add 1 tbsp in a saucepan and when it’s hot throw in the 2 big red chillies which have been split lengthwise,followed by the cumin,crushed garlic cloves with skin, some of the red onion chopped leftover from what went in the pan and the shallots chopped lengthwise.Keep the saucepan on a low flame to prevent burning of these ingredients.

  • When the garlic is done and the pungent chilli and garlic gives off its trademark punch of aroma throw in the Kaffir lime leaves ,when the onion is totally pink n garlic crisp , throw in some of the vegetable stock and some water , add the noodles carrot and broccoli ,cover and bring to a boil, at this stage the carrot is almost cooked and the noodles too, scoop in the chicken and the thick onion-tomato gravy it was in, ensure you get every last bit of the thick sauce from the pan to not loose any of that wholesome goodness!

  • Now throw in all the remaining vegetable stock and water and add salt and red chilli powder as per taste.
  • cook on a low flame with lid till done, the chicken should just fall of the bone easy and the carrot should be well cooked but not squidgy.
  • Serve hot with soft boiled potatoes in butter and herbs or a crisp baguette.

At 2 small spoons of oil and how it fills you, this one dish stock pot is filling, wholesome,relatively easy and a good for a weekday dinner when you are feeling  well BLAH 😉
