Smoked Spanish Peppers and Zingy Mushrooms in a creamy sauce

My love for using smoked sweet red peppers is taking over my recipes for now , I made these zingy mushrooms for a friend who popped in for brunch about 2 months ago but I have been very lazy and this recipe is finally seeing daylight. I guess the electric atmosphere of the yellow jersey clad stadium full of Brazil fans and the super tight match going on with Camroon is giving me a much needed rush of happy hormones ,add to that the frenzy of the Wimbledon matches , the air in Wimbledon is heavy with anticipation, huge posters , fluorescent tennis ball props in all windows , the traditional colours of the Wimbledon ribbons and balloons galore, the bus service from the station to the venue with hyperexcited people , everything is screaming tennis here!

Lamuyo Peppers are great for roasting as they are bigger and sweeter than their cousins the hot variety. They are juicy and crunchy and go well with garlic,basil,oregano,taste fab with cheese , think stuffed peppers grilled , just perfect for summer !

The recipe was given to me by P aunty , shes a fab cook as I have mentioned in my past posts too and her recipes are innovative, delicious and easy to make, I love pestering her to keep sending me more recipes everytime we talk 😉 .So I decided to amp up this recipe with some madness my style and use up the handsome red pepper staring at me from my fridge 😉

Ingredients:

  • 1 large pack Chestnut Mushrooms sliced
  • 1 large red Lamuyo sweet pepper
  • 8 cloves Garlic- bash and chop fine
  • 1/2 red onionchopped very fine
  • 2 chillies- (more or less acc to your taste) – chop fine
  • 3 heaped tbs flavoured soft cheese, I love using the herby Philadelphia
  • 2 tbsp  Olive Oil
  • Sea Salt to taste
  • Parsley- a handful -chopped finely

Method:

  • Roast the pepper on gas flame till the skin chars and begins to peel off, I use tongs to hold it by the stem so it can char even at the top.
  • While the pepper cools just enough to allow you to peel and reveal the smoked juicy flesh, you can use the time to wash and slice the chestnut mushrooms
  • While taking off the charred skin off the smoked pepper remember to place a dish below as it will release lots of juice which we don’t want to loose as it is one powerhouse of smoky peppery sweet flavour!
  • Heat oil in a sauce pan and saute the garlic till it turns brown and the familiar aroma of fabulous garlic begins to waft and assault your nostrils.
  • Then add the very finely chopped red onion and cook on a low flame stirring regularly till the onion is thoroughly crispy and reduces in quantity, do not let it burn.
  • Then toss in the mushrooms and the chopped smoked pepper and cook for about 2 minutes on a low flame ,stirring and making sure it does not stick to the pan or overcook
  • Then add the soft cheese ,sea salt and finely chopped parsley,mix well and cook with lid for about 1 to 1 1/2 minute.
  • Serve with garlic bread smothered in butter – eat guilt free;)

What I love about this dish , its creamy , its a bit sweet a bit more zingy and has an underlying deep smoked flavour that is robust without being overpowering ,I’d say its a new comfort food for me , what with all the moorish soft cheese in there!1-IMG_6699 (Copy)

The new Superman Flick and dinner at Ekachai? Ultimate combo!

Man of Steel in 3D for a late evening sounds like super fun!If your going to the mall at Wandsworth like we do, why don’t you tuck in at Ekachai before the show? It’s a great Asian food place. My hubby and me love eating there, our favourite dish on the menu is this street style pork and rice dish. Believe me when I say this, one bite into the pork and you are hooked forever!

This dish is described on their menu as ”Khao Moo Dang – Thai hawker stall favourite of rice topped with Chinese BBQ pork and BBQ sauce served with a boiled egg, cucumber,topped with spring onions and coriander” – what an absolutely heavenly combination. The pork is extremely well cooked and portion size is generous so we go early, get our movie tickets done first and then sit and enjoy this meal, savour each bite you take of the succulent pork smothered in BBQ sauce as it engulfs your tongue in an exotic wrap of flavour ummm,just the right balance of flavours married together.

Wash it down with a Tiger Beer if you will or go for the Red or Green detox juices without sugar, they are so,so good !

We really loved the new Superman Flick Man of Steel, it’s so well made and Henry Cavill is HOT! A ”Superman coming of age” film me thinks, none of the old carry over from previous films of him trying to fit in, hard hitting action scenes, lots of BISH-BASH-BOOM, loads of mixed emotions, as I’d say in Hindi it was total ”paisa- vasool, DHISHOOM DHISHOOM dhamaal wala picture” (Totally value for money ,action packed movie!) I am a total sucker for comics and superheros, I even have my own little collection of the superhero toys,yep! Of course, Superwoman is my fav!

Excited about Food Blogger Connect, yes am going back!

Hello hello! Along with my efforts to get things out of my drafts folder, I thought I must share that I am super excited to be going back to the Food Blogger connect, it’s happening this July. Last year I managed to only attend the LAST day but what a day it was! Action-packed and so full of activities, I met some really fun bloggers. I wish to especially mention Grace who blogs at ‘A life unhurried’ and takes the most amazing pictures!

It was a power-packed day with really informative and motivating sessions. The whole place had crazy vibrant energy going around and I came back power-packed with ideas for my blog.

I hope that this year I can really ”connect” with the other bloggers and enjoy my time and yes learn a whole lot of new stuff!

Well, let us get going then, oh yes, I will soon share pictures about FBC 4, a ”Quick Byte” with a fellow food blogger (that’s a secret for now!), and lots more! 3 cheers to Food Blogger Connect!

Baked Salmon and a crunchy vegetable salad

This is probably my simplest ,fastest and yet very tasty AND healthy meal option. All you need is 2 slices of salmon some salad leaves and a hotch potch collection of any thing that can yumm up a salad! Few Minutes in the oven and hey Presto ! a healthy meal is ready to tuck in.

What I love about the after feel of this kind of a lunch or dinner is that it leaves me full and satiated and not feeling bloaty or heavy or drowsy for that matter!

So my ingredient list goes like this , but honestly for the salad just use any combination of leafy stuff and spices that you have in your fridge and cupboard and slam them together to make your own accompaniment!

  1. 2 slices of salmon fresh
  2. 2 thick slices of lime to wedge into the fish and a large slice to splash over the salad.
  3. one spoon olive oil
  4. Mixed italian herbs to season the fish – better if you have fresh herbs
  5. crushed black pepper and rock salt to sprinkle
  6. some capers for seasoning
  7. Salad leaves of your liking I use the mix leaves packets from the supermarket – rocket,spinach,lettuce mixed with some peppers and red onion sliced  for some colour, crunch and taste.
  8. Cherry Tomatoes
  9. A cheese slice – anything that you fancy
  10. Some onion flakes to dust over the salad

This meal takes lesser time to cook than it took me to write this blog post 🙂

Method:

  1. place the salom piece on a foil, lightly drizzle olive oil , wedge a slice of lime in between and sprinkle sea salt and crcaked black pepper and a generous sprinkle of italian herbs, mine came out of a bottle.
  2. Give the Salmon just enough time in the oven to cook, fish cooks fairly fast and these 2 slices took less that 7 minutes in a pre heated oven.
  3. Once done serve the salmon alongside a generous helping of salad leaves and juicy cherry tomatoes,toss a few capers , tear some cheese to season, give another drizzle of olive oil and a big squeeze  of lime ,finally add some crispy fried onion bits, finish off with sea salt.
  4. Dig in and feel full inside and light and skippity on a full stomach.

P.S: of the time you save when you choose this light, easy and quick dish , grab that novel you have been waiting to get done with enjoy a relaxed afternoon curled up on the sofa…I did…:)
