Prawn Khichadi (Pulav/Pilaf/Poolav)

This is NOT just a  recipe, it’s a Family Heirloom passed down the generations and cooked with great relish by my mother-in-law and her mum who is now 82 years old and still can stir up some to-die-for finger-licking dishes!

But before I start off rattling the ingredient list, a ”slice” of some history about the origin of this rice and prawn union. Coastal cuisine in the western Indian state of Maharashtra relished by the Maharashtrian community relies heavily on the use of all versions of the coconut, the most potent form being as part of the Goda masala. This and of course, the abundant availability of fresh seafood has given birth to many delicacies many of which are age-old like this dish.

It’s also my prized comfort food and guarantees a great Sunday afternoon nap πŸ™‚ and will ensure you are crowned kitchen queen and master chef of all things nice hehehehe

Ok here goes, the ingredient list – This dish serves 2 adults for 2 meals with 2 generous helpings each and leftovers for the next day.

Prawn Khichadi (Pulav/Pilaf/Poolav)

Ingredients Equipment Method

Ingredients
  

  • 500 gm Prawns
  • 2.5 Cup Rice
  • 3 Bay leaves
  • Goda Masala
  • Tumeric Powder
  • Red Chilli powder
  • 1/2 Lime
  • Oil
  • Salt to taste
  • Ginger and Garlic Paste
  • Wet grated coconut
  • 2 Red onions finely sliced
  • 1 thumb-sized piece Cinnamon (Dalchini)
  • 3 Cloves
  • Green Masala

Equipment

  • 1 Big Sauce Pan
  • 1 Mixer / Blender / Hand-blender
  • 1 Knife
  • 1 Spatula
  • 1 Chopping Board

Method
 

  1. On a pan on low heat sautΓ© one finely chopped onionand the fresh wet grated coconut till the onions starts to caramelise, afterthis cools give it a spin in the mixer and make a fine paste.
  2. Marinate the washed rice in some the above wetgrated coconut and onion paste, some goda masala , a squeeze of half of alime, salt, ginger and garlic paste and some Cinnamon. Set aside.
  3. De-vein the prawns, wash under tap water andmarinate with red chilli powder, turmeric and green masala.
  4. Take oil in a vessel and sautΓ© the marinated prawnsfor 1-2 minutes.
  5. Heat Oil in a vessel big enough to cook the riceand prawns together that will hold the water as well , add the cloves,remaining cinnamon and one very finely chopped red onion, add the marinatedrice and stir it , do this on a low flame.
  6. Then add the marinated prawnsand water, for rice dishes water is always double the measure of the rice usedso for 2.5 cup measures of rice use 5 cups of water.
  7. Cover and cook on a low flame.
  8. Serve piping hot with a side of cooling curd, you can also serve with your favourite pickle. I generally serve this with a spicy Curry.

How to make Green Masala

Green Masala – Use a bunch of coriander and two green chillies and give them a spin in the mixer, store this fine paste in the freezer and use it as and when needed, it’s one of the most basic marination masalas in most Maharashtrian non-veg dishes, especially seafood.

Spicy Curry

In a pan heat some oil and add asafoetida one pinch, add puree of 2-3 large red onions and one tomato and puree of 1 handful of wet grated coconut, season with red chilli powder, turmeric, salt, green masala, Goda masala and cook on a low flame with enough water to ensure a thick curry, Amp up the red chilli powder and green masala to your level of tolerance of spicy food!

Update in 2013

A few days after I published this recipe, ‘A’ gifted me my first DSLR Camera – a shiny new Canon 600DS and I’ve been clicking away like a happy bunny ever since πŸ™‚

To my absolute delight, he helped me add a new lens to my kit and gifted me a 50mm f 1.8 lens this year on my birthday. It is great for close-up food shots and true to the reviews, it works well in low light conditions.

The image below is from my kit lens where am struggling to fit everything in frame and focus on the prawns, I have sharpened the image, adjusted light and cropped it using Picasa 3.

Now see the difference in the image below, I love how the prawns are in sharp focus and how am able to easily adjust and fit everything in the viewfinder.I have adjusted light and sharpened the image very slightly, I am truly pleased with the results πŸ™‚

Experiments with Food Photography

Inspiration for posting some Splendid recipes from theΒ  secret closet of my mind or some hand me downs from my mother , mother in law ,grand mother or a close friend have been waiting to come onto this blog , but I have been lazy , though now it is time , so I have decided to bombard my readers with these rocking recipes that can add some serious fun to your kitchen adventures !

I know that at times it takes a lot to inspire one to get out of a rut and get there , so I take these food pictures from time to time to keep looking at whenever I need a little nudge !

Hope they work their magic on those hidden culinary desires inside you as do so work their magic on me !

Olympics 2012 Hightened Excitement !

Didn’t want this blog post to languish in my drafts folders , I wrote it on the day I saw the Olympic Flame at Ealing Broadway- 24th July 2012 Tuesday ,ALSO wanted to post pcitures of the 2 Olympic events and blog about the excitement surrounding the Games,so had to start somewhere……

I was relatively unaffected by all the BUZZ surrounding the Games,almost immune in a way , but I guess what turned things around almost 360 degrees inside my brain was watching the Olympic Flame along with a large crowd ….

On the 23rd Monday the flame was set to pass by through Wimbledon , I did manage to just catch a glimpse and was rather disappointed as the crowds moved off and I didn’t get any pictures. So with steely determination and a purpose in mind I set off the next day to see the flame near Ealing Broadway .

I set off early, the weather was unusually amazing , the sun was shining brightly ,in fact a bit too bright for me as I spent over 2 hours toasting under the direct heat just to watch the flame pass by .

But if ever there is a shared experience with a bunch of strangers that I shall cherish then it is this … and of course in the next 2 days am off to see some events at 2 different venues , but this particular experience makes me go all quite and i can replay the scenes in my mind over and over again ….

The crowds had just begun to get in and throng the sidewalks leading to a public park close to the Ealing Broadway station, I stood at one such sidewalk , thanking my stars that I had arrived early and had found space to lean against a railing . I had for company a primary school teacher who was very nice and chatty (thank god !)and a rather grumpy looking lady on my right who wasn’t too pleased by my arrival as she had to ”make space ” for me on the railing , sigh, it takes all types to make the world now doesn’t it ?

No sooner had I settled and Ms.Teacher and me were discussing the current political situation , that there was a large influx of crowds , the Sun decided to turn up the heat by several notches and a large group of police men and women started patrolling the streets .

The first sign that the torch bearers were to arrive ! yay !

An old lady then came and I quickly helped her squeeze in next to me (on my right of course πŸ˜‰ !!!) , she was very , very ,well, very chatty πŸ˜‰ but very sweet all the same, then came along 2 boys aged 9 and 6 ,extremely fidgety and with their old aunt and decided that Ms.Tecaher and me were perfect people to chat with , so as they enlightened us about how the world appears to them and their opinion about almost anything , we started taking it all in.

Vendors hopeful of selling BG flags, balloons and all other bits and bobs were trying their best to tempt their wares .

At this point I really thought I would faint and was so grateful for The Metro I had picked up earlier at the tube station , it was my cap and was my shield Β  from the Sun and it’s persistent HOT HOT HOT presence.

Loads of cars and buses kept passing by the road making me wonder how the cops would manage the crowds and the other vehicles of the sponsors that were to pass by as they headed towards the public park for the evening celebrations – a mass public party so to speak !

Let me count down the minutes to when the flame actually arrived by way of sharing the pictures I clicked …

It is an event that celebrates human spirit and brings together the world like no other and what better way to make bring closer to the people of GB, than giving us all a chance to be a part of the Games if only as spectators to watch the flame pass us by ….For this chance am ever so grateful and I know this is a memory I shall cherish forever and share with all my loved ones as I have shared with you

”POSH ”Victoria Sponge Cake

What better way to celebrate the excitement surrounding the Olympics happening in London than sinking my teeth into a perfectly delicious soft Victoria Sponge Cake!

It’s an easy recipe and the result left me feeling like so very happy!

I tried to read up online why it is called a ”Victoria” Sponge cake and the apt answer seems that since Queen Victoria loved this soft cake with her afternoon tea! So I am going to savour the cake and afternoon tea as I cheer myself hoarse in front of the telly whilst watching the Olympics πŸ™‚

Lovely! So let’s get baking and when your done gobbling some of it, drop me a line and let me know how much you enjoyed creating this yummy delight!

This cake serves 8 people, takes about an hour to prepare.

I choose to call it ”POSH” because that’s Victoria Beckham’s pop name, our very own British star and this cake is modernised version of a British Classic recipe with a twist as it is layered with Creme Chantilly’ – very posh sounding indeed!

Ingredients:

  • 225 g unsalted butter, softened, plus extra for greasing
  • 4 medium-sized eggs, organic if you please
  • 225 g caster sugar
  • 225 g self-raising flour
  • 4- 5 Large tablespoons of Strawberry Jam, the traditional version uses raspberry Jam, I used strawberry conserve.
  • 250 gm fresh strawberries sliced lengthways
  • Icing Sugar for dusting on top of the cake
  • Soda Bicarbonate – 1 teaspoon
  • Baking Powder 1 Teaspoon

To make the  crΓ¨me Chantilly:

  • 300 ml double cream – so sinful πŸ˜‰
  • 25 g icing sugar
  • I tiny cap full of Vanilla essence, the original recipe inspired by The Good Food Channel advises to use – 1 vanilla pod, halved lengthways and seeds scraped or vanilla extract

METHOD :

  • Preheat the oven to 180C/160C fan/gas 4. Grease and line two 18cm cake tins with a removable based with baking paper. I inaugurated my brand new weighing scales and cute cake tins I purchased for all future cake making experiments!
  • Put the butter and sugar in the bowl of an electric mixer and cream well until light and fluffy – this will take at least 10 minutes to get it properly aerated. Use the 10 minutes you have to wash and clean the strawberries and slice them lengthwise. This was also a first for me in terms of using my food processor to mix the butter and sugar mix. Then empty this butter sugar mix into a large mixing bowl, I also have a NEW nice bright Orange bowl!
  • Break each egg and add one at a time, whisk the mixture well after each addition to ensure it is soft and fluffy.
  • Add the self-raising flour to the above butter, sugar and egg mixtures, I added one spoon at a times and mixed it really well each time. Add the Bicarbonate of soda and Baking Powder to this mixture, I used this as I do in every cake but the original good food channel recipe does not mention these 2 ingredients. Later I used a hand blender to really get this mixture to feel like one entity and till it felt right to pour into the ready cake tins.
  • Now pour the above cake mix in equal portions into the  2 cake tins and smooth the top with a plastic spoon, the type you get with a food processor.
  • Bake for 20 minutes, with a timer, until risen and golden. Ensure you do not go over the 20 minutes, also if you are using a fan oven as I do, use only the setting that heats from below.

For the crème Chantilly:

  • Put the cream in the food processor, add the icing sugar and the vanilla essence. Whip to the soft peak stage, using the slow speed setting then refrigerate until slightly firmed.
  • Take the strawberry jam into a small pan and warm gently whilst stirring, use low flame and do not leave on pan for tool long.
  • Remove the cakes from the cake tin, on the top of one cake spread the jam from the pan and add the chopped strawberries.
  • Then get the Creme Chantilly’ from the fridge and spread generously over this.
  • Place the second cake on this and press down ever so gently.
  • Dust the top of this lovely sponge cake with a bit of icing sugar and decorate with a blob of the Creme Chantilly’ and some sliced strawberries!

Voila, the classic British cake with a twist – Posh Victoria Sponge is ready for you to savour, impress your family and friends and enjoy baking over and over again!

Daunt Bookstore – A magical experience

I love reading and I love spending time in bookstores curled up in a comfy chair ,with the smell of new books all round and slipping away in my mind on crazy adventures to faraway places or chasing killers through the pages of a racy thriller.Whatever your genre’ of books , a visit to the historic Daunt Bookstore in London at Marylebone is a MUST!

Why ?

Well ,for one ,it’s inside an old Victorian building and though set now amidst a lot of modern shops around in the heart of Central London , one step inside and you are instantly inside a different world.

When you walk into the main area inside also where one can see a glass stained window and the steps leading to the basement and to the mezzanine sort of area and if you don’t fall in love with this book store then you are probably not one of the crazy book lovers that exist !

The beautiful eco friendly jute carry bag that one can buy from bookstore also has a stencilled image of this very view ,so readers feats your eyes on the image below and I hope it makes u sigh , I  did , rather audibly so …

It’s old world charm coupled with the fact that they do have  rather large and well researched collection of books is any book lovers dream come true.

My very pregnant pal K and me spent hours browsing ,reading -of course after settling ourselves near this massive stain glassed area on two cane chairs, but hey the basement is cosier , quieter and a proper ”loose yourself in the moment” type of setting .

I did find it annoying though that some people who came in , didn’t bother to speak in hushed tones or put their cellphones on silent mode ,grrrr , I dislike such bad habits ..note: making angry bird faces πŸ™‚

I must also add that it was very nice indeed that one of the staff members allowed me to click these images inside with the promise that it wouldn’t disturb anyone.

Of course it would be massive injustice to us and the bookstore to walk out empty handed so K purchased a book on parenting and I decided to go for a classic : Three Men in a boat by Jerome K Jerome .

I did have an small debate whether I should allow myself to splash out on other books or beautiful post cards with vintage prints but on my shoe string budget and part time employment income it just didn’t seem right , oh well , in hope of happier days πŸ™‚

After such a beautiful experience it was necessary to end the day perfectly so after a brief de-tour to a rather interesting shop selling fresh sea food,we landed at Patisserie Valerie ( the foodie in me just ended up walking into the sea food store ,chatting up with the friendly fella there and chomping on a green green sea weed which looks like thin tiny sticks with joints evenly spaced, it is naturally salty in taste and one can eat it after lightly stir frying in a generous blob of butter just as you would relish say, fresh asparagus !I unfortunately can’t recollect the name of the weed or of the store , oh well ! ) I am ever so grateful to the shop owner who was kind enough to let me click these images !

Well, after these visual delights , we allowed our senses to be bombarded with the amazing display of a maddening variety of cakes,pastries,pies and chocolates on display at the Patisserie Valerie. After settling onto a table I decided to gorge on a tart . Unfortunately, I was so besotted with the place and later lost in the experience that I didn’t take any pictures inside this wonder-full cafe. Established in 1926 all their 50 cafes spread across England have an undeniable charm, one must visit to know. Of course, now they are high tech too with a website and social media presence.

It certainly was one magical Wednesday but we had to part and get back from Victorian Times to attend the mundane tasks of our daily existence, ever so reluctantly we did…

Memory Palace ….

Thomas Harris has described this bit about his character Dr. Hannibal Lecter very vividly in his book. Of how he has many ”rooms” in the ”palace of his mind” where he has stored very colour full memories associated with various stages of his young and happy childhood , until war , disaster and finally the tragedy struck which turned him into the dangerously intelligent doctor with a taste for human flesh.

It may sound odd to draw an anaology from this biut somehow the memory palace started taking birth deep inside my head .

Many a times when I am reading a book , watching a film or simply taking a walk, if something or someone reminds meΒ  of a special memory from my life . I walk back in time and relive it , in all it’s glory , am sure at times I even imagine and add to that memory , just to amuse myself . Make a happy memory happier , a scary one less frightening.

God alone knows how many such ”rooms” we all have in our personal palace of memories stored inside the least understood but most mystifying part of us – our minds….

Is the British Summer really here ?

It’s been a fine few Sunny days this week , with no rain , the cloud all baby blue with fluffy tufts of white cloud like cotton candy flitting about , all pleasing to the eye. I notice more when I walk around , I smile to myself as I see the whole place washed in bright sunlight . I love the feeling of not wearing a heavy coat or finally getting a chance to show off my pedicure and my new Accesorize chappals πŸ™‚ with shiny beads that glint like a million diamonds in the morning sun !

Even the early morning office goers seem to be smiling in spite of the rush!

The pubs are full in the evening with the wooden benches finally occupied with footfall fans enjoying the game with their mates.

My favourite park is packed to the brim with mum,s buggies, happy babies, toddlers of all shapes and sizes with pink cheeks crowding around the happy ice cream van vendor .

I hope this lasts though , I could really soak up a lot more sun. The evenings are definitely still chilly and as I wrap myself in my spring denim jacket and pace up home from my evening stroll , I look at the spanking new Coffee shop that;s come up around the corner .

Is my lazy little ”end of the road” locality going to loose it’s villagey charm I fear ? Sighh… anything and everything is bearable I feel if the British Summer soaks up the nation in all it’s summertime glory and if last years extended autumn was anything to go by then let’s hope for a spiffing one this year round too !

Ruskin Bond and Hayfever

I am suffering …it’s a crazy mix of Hayfever and a viral infection which is messing with my throat . So I am congested , sneezing ,wheezing,coughing and drowsy all the time .

As is my practise every morning , I logged into my email to check and there were 2 emails from my council library to come and collect the reservations – – Two Ruskin Bond books I have been waiting to get my hands on for months now !

In spite of all the misery , I am smiling , ready to rush out and get the books home, will then curl up on the sofa with a dozen fluffy pillows, a HOT mug of tasty chicken soup and read till I sleep into a blissful sleep – hopefully πŸ™‚

I cannot believe I have gone through life not having read any of his awesome books , to think that he is of British descent and that many of the big book stores here do not stock his books is really sad . But thankfully the libraries run by the council’s in London are all connected so even if these books were miles away in another borough, I simply reserve them online ,albeit for a nominal charge and then just wait for then to make their to the library next to my house .

What I am looking forward to the most is slipping away into the bylanes of India’s northern states , seeing it through eyes and loosing myself in the magical tales he has weaved . I am sure he already has a long list of fans world over and I have added my name to that list . So Hayfever and a sore throat not withstanding, I am going to go get the books right away .

Ok maybe after a small ,much-needed nap πŸ™‚

Ressurecting LEFTOVERS ! A quick recipe for Phodnichi Khichadi

Heya all ye blog readers, followers or mere net trawler’s!

I have a simple yet effective way of resurrecting plain white boiled/steamed rice and conjuring up a tasty spicy dish to allow for a guilt free ,time-saving recipe which will not only help you NOT die of guilt for throwing away rice that’s perfectly OK but just stale and also having the pleasure of cooking an easy peasy meal all on your own. Of course it’s NOT my own recipe but a hand me down from my mother! GAAH and YOU actually thought I was that creative …giggles to herself and continues typing …

Well you need, yes! Of course my dear genius some leftover white plain cooked rice.

Depending on bow much rice you have say roughly a medium sized soup bowl for example, you will need:

1.2 tablespoons oil

2.2 cloves of garlic with skin

3.1 medium sized red onion finely chopped and I mean FINELY !hehehe I like trying to sound very professional, am just joking here, chop it how you will!

4.few fresh green lovely curry leaves.

5.Turmeric Powder

6. Salt to taste

7.Chilli Powder

8.Pinch of Asafoetida

9.Β  A pinch of each Jeera (Cumin seeds) & Mohri (Mustard Seeds)

10. A tiny squeeze of lime

11. Some finely chopped freshly coriander for garnish

12. One or two green chillies chopped

Ok now heat the oil in a pan , add the Hing (Asafoetida powder) , add the Mustard seeds and Cumin seeds and wait for the mustard seeds to crackle in the hot oil, then add the garlic finely chopped with the skin and let it turn brown and crisp , believe me,it adds a power packed punch to the flavour of the rice,then add some green chillies chopped to a size that you can pick them out if you don’t want to set your tongue on fire ! Then,in go the curry leaves and the chopped red onion,after the onions are nicely tossed and turned in the oil to give them just the soft and crunchy texture you need,toss in the rice and slightly turn it with your hand before you do to prevent it from sticking , it should open up so that the flavours of the tadka (seasoning ) touch EACH grain and coat it with their heavenly goodness !

Then add the turmeic powder, red chilli powder and mix well, cover the vessel and cook on a very low flame so as to prevent the rice from sticking to the pan at the bottom. Steam for some time and open the lid,squeeze a generous bit of lime on this dish and garnish with fresh coriander, you can even add a few bits of chopped fresh tomato of you like.

Serve HOT with any curry or ”leftover” dal reheated.

I LOVE eating this plain with a big dollop of curd or plain yogurt too !

I am SURE it’s the SUN , it’s making me feel so cheerful,peppy , and am doing a zillion things more than I would on a gloomy day !

I have thrown open wide the windows , m actually hoping to do most of the things on my LONG ”To Do” list , I am smiling to myself and humming some silly tune πŸ˜‰

Yes , am sure it’s the sun !
