With results similar to tandoori fish kebabs, this flaky fish lends itself well to hot and fragrant Indian spices.
Recipe type: BBQ
Cuisine: Indian
Serves: 4
  • Iceland 4 haddock fillets frozen - one pack
  • 3 large heaped tbsps olive oil
  • 2 level tbsp spice rub
  • Juice of 1 large lemon or 2 small limes
  • 1 heaped tbsp chopped fresh coriander leaves to garnish
  1. Remove the fish fillets from the freezer and hold under running tap water to get any ice clinging to them off
  2. Pat dry with paper towels
  3. Mix the homemade spice rub with olive oil in a small bowl
  4. Slater on the marinade onto the fish generously and place two fillets at a time gently inside a fish grilling wire basket.
  5. Place onto the BBQ and cook on each side fro few minutes.
  6. The fish is cooked when it appears flakey and opaque.
  7. Because these fillets are thin and on direct heat they cook through very quickly, take care not to overcook to avoid dry fillets.
  8. Squeeze a lime generously over the grilled fish and top with finely chopped fresh coriander leaves for truly fresh flavour that compliments the spices in the homemade spice rub.
